Recipe:

What you will need:

1 cup cooked and cooled sweet potato (I like purple sweet potato for this recipe, but you can use any color sweet potato! Donā€™t have any? Thatā€™s okay! You can also use: pureed carrot, butternut squash, pumpkin, or banana. If you use banana, use 1/2 cup)

1/4 cup oil (olive oil, coconut oil, or ghee)

1/3 cup maple syrup (can sub honey)

2 eggs (if you have egg allergies, you can sub for 2 Tablespoons (TB) Sunbutter or nut butter.

1 tsp vanilla extract (optional)

Directions:

Preheat oven to 350Ā°F.

Combine all ingredients in a food processor or blender. If using a hand mixer, blend wet ingredients first, then add dry ingredients. The batter will be thick.

Transfer blended parchment lined 7x7 or 8x8 baking dish. Spread batter evenly with spatula.

Bake at 350Ā°F for 25-30 minutes. Use a toothpick to check if done. Cool before cutting. Optional: sprinkle sea salt on top. Enjoy!
